Stinging nettle is a healing herb rich in vitamin C. Organic stinging nettle can be made into teas, soups, and pesto. Medicinal uses are many, nettle has been used in treating eczema, allergies, gout, anemia, arthritis, and enlarged prostate.
How to Make Nettle Soup
- 1 to 2 chopped onions
- 2 T. Olive oil
- 4 cups vegetable stock (or water)
- Freshly harvested nettle tops
Saute onions in olive oil. Combine sauted onions, vegetable stock and several handfuls of nettle tops in a stock pot. Simmer on the stove for 10 to 15 minutes. Puree with a hand-blender. Season to taste with pepper, turmeric, or other spices. For a heartier soup add cooked potatoes and milk or cream.
