DAY 13
Again no weight change, I must have hit a plateau.
Breakfast - Mushroom, sun dried tomato and herb omelet (two eggs)
Mid-Morning Snack - skip
Lunch - Protein Bar (Balance Almond Brownie)
Mid-Afternoon Snack - skip
Supper - Tomato spinach soup and diet swiss cheese
Dessert - teaspoon peanut butter
I was away from home on a road trip today. I didn't have a chance to stop for lunch so I brought along a protein bar. The bar was a cheat, and I must admit it was pretty tasty and satisfying. I ate every crumb, feeling slightly guilty but HEY! On my way home I stopped by my sister's home for a short visit and was able to join her, her family and my parents at my young nephews' cross-country track meet.
Afterwards, my mom was concerned that she didn't have anything to feed me for supper that would align with my diet. I told her not to worry and together we went to the store and got the fixings for tomato spinach soup. Yesterday I caught Rachel Ray's cooking show, 30 Minute Meals, and watched her prepare this soup. At the time I thought the ingredients were perfect for Phase I guidelines. We adapted her soup recipe slightly.
Tomato Spinach Soup
Ingredients:
Fresh or canned vegetable stock
1/4 cup extra virgin olive oil
2 garlic cloves - minced
3 green onions - sliced
1 28 oz. can crushed tomatoes
1 15 oz. can diced tomatoes
1 10 oz pkg. fresh spinach leaves - remove woody stems and chop
salt and pepper
Cover the bottom of your soup pot with oil. Saute garlic cloves and onions in oil. Add in vegetable stock and bring to slow boil. Add in both cans of tomatoes. Allow soup to cook at a low heat for about five minutes. Last, add the chopped spinach leaves and allow them to reduce. Salt and pepper soup to your taste preference. That's it! Simple, simple, simple!
Fresh Vegetable Stock
1 carrot - diced
1 celery stalk - sliced
1/2 medium sized onion - diced
1 & 1/2 cup water
salt and pepper
Microwave on high for five minutes. Drain vegetables from stock (optionally you can puree the vegetables and add to your soup). We didn't puree the veggies as I'm not suppose to eat carrots due to their natural sugar content.
This soup turned out quite yummy, if you like tomato soup and spinach you really should try it. It's simple to make. I felt very full on my hour drive back home.
DAY 14
It is the morning of my last day on Phase 1. The scales show I'm up one half of a pound. I wonder if that is a result of that brownie I ate yesterday.
Breakfast - Two poached eggs, V8 juice
Mid-Morning Snack - skip
Lunch - Swiss steak (last of my Harvest Supper leftovers)
Mid-Afternoon Snack - Seltzer water with a splash of OJ, Taste nibble of husband's Lemon Meringue flavored Balance Protein Bar (not so great!)
Supper - Broiled pork loin and steamed cauliflower
Dessert - Banana popsickle
Those sugarfree popsickles are becoming a favorite of mine. They are pretty good thirst quenchers.
