One of the least stressful Thanksgiving dinners I ever prepared consisted of two food items: oven-baked frozen turkey pot pies and root beer floats. My kids were young and they loved it! You might not be able to get off that easily but there are ways to minimize the stresses that come from preparing a "gluttonous" meal... you simply need to take a few steps away from the traditional fixin's and simplify your menu.
