Low Carb Chili Recipe

A reader emailed me this week asking me for my chili recipe. She has been following my diet log in which I had made reference to my chili dinner during Phase one of the South Beach Diet. Hmmm... I've never actually written out my chili recipe before, but I'm happy to share it.
I guess this is as good a time as ever to report that I'm doing extremely well maintaining my goal weight that I met a few months back.
I realize that I can never go back to eating whatever I want whenever the mood strikes me without expecting the scales to jump forward. One day of splurging on bad-carb treats will bump me up 2 (and sometimes 3) pounds the very next morning. Afterwards, it takes me three to four days of good behavior for my weight to return to my happy number. However, I'm not finding these fluxes difficult to manage. I'm definitely enjoying life and all it has to offer, including an occasional cookie or ice cream cone. I'm not even concerned about all the hype on low-carb diets being unhealthy as reported by media outlets these days. I'm eating smart-carbs, not avoiding carbs altogether.
